Why fresh milled?

For most of human history, flour was milled fresh. Whole wheat was ground at home or village mills, preserving its nourishing bran and germ. Modern shelf-stable flour removed these parts, stripping away most of life-giving nutrients. Fresh milling restores the fullness of the grain and reconnects us to an ancient, wholesome way of eating.
